The first recipe that comes to mind when asked to use oil is this yummy spicy Andhra special "Dosavakaya Pacchadi" which uses a generous amount of oil. Spicy and healthy !!!!
Ingredients:
yellow cucumber(dosakay)- 1 big (approx 3 cups)
Red chilli powder- 1 cup
Salt- around 3/4th cup
mustard powder- 1/2 to 3/4th cup
fenugreek powder- 1 tsp
cumin powder- 1/2 tsp
warm oil- 1 cup
TO temper
oil- 3tsp
mustard seeds - 1 tsp
cumin seeds- 1 tsp
urad dal- 1 tsp
red chillies -3
garlic cloves-2 to 3 OR asafoetida - a big pinch
Cut the cucumber into bite sized pieces as in the image.
Mix all the dry ingredients well to the pieces.
Add the warm oil, temper with mustard seeds, uraddal, cumin seeds, dry red chillies, asafoetida and mix well, keep aside for a day and store it in airtight dry containers. When refrigerated this pickle stays good for around a month.

Notes:
The cucumber selected should be firm when touched (neither too ripe nor too raw)
There should be zero moisture be it in the mixing bowl or the spoon or the storage containers for longer life.
Home made powders definitely smell better than the store bought ones.
